A little egg history: During Medieval times, eggs, milk and meat were not eaten during Lent. But they were served to break the fast on Easter Sunday. That’s where the term breakfast came from.

According to our friends at Wikipedia: The White House Egg Roll started in 1814 although there is no documentation to support the fact. Dolly Madison was the first First Lady to invite children to the grounds of the Capitol; in 1878; President Hayes and First Lady, Lucy moved the event to the White House lawn. It was stopped during Pres. F. Roosevelt’s term and started again by Mamie Eisenhower who opened the event to black children for the first time.

May Is National Egg Month: With all the see-sawing back and forth about the amount of eggs that you can safely eat. The latest research has shown that one egg a day won’t increase the risk of heart disease in otherwise healthy adults. Eggs have vitamins B12 and D, riboflavin and folate–all good stuff! My father-in-law was devastated back in the 70’s when the number of eggs allowed was about one a week. eggs were his favorite food and he was advised not to eat them.

The color of the eggs depends on the color of the chicken doing the laying. Brown hens; brown eggs. White hens, white eggs.  I can’t explain these.

This is how I make hard-boiled eggs and it always works:

Place the eggs in the pot in a single layer. Add cold water to cover about an inch over. Bring to a full boil over high heat, remove from heat, cover and let stand for 15-20 minutes. Drain. Place in a bowl with ice water and cubes.  When cooled, drain. and peel or color.
